One of the things that all three of my boys love and will eat every time I make them is meatballs. They gobble them up and never moan and groan. They are also big fans of sausage. So combining the two made for a huge hit. I use Rao’s sauce, and put them over zucchini noodles for my husband and I. The boys love theirs over gluten free pasta or mashed sweet potato.
Paleo Chicken and Sausage Meatballs
1 lb ground chicken
1 lb sweet italian sausage (chicken or pork), casings removed
11/2 Tbsp coconut oil
1/2 medium yellow onion, finely diced
1 tsp minced garlic
1/2 of a beaten egg
1/2 tsp salt
1/2 tsp pepper
1/2 tsp garlic powder
1 tsp onion powder
1 tsp dried basil
1 tsp dried oregano
Preheat oven to 350 degrees
In a large skillet, melt the coconut oil over medium heat. Add onion and cook 3-4 mins. Add garlic and continue another minute. Turn off heat.
Combine remaining ingredients in a bowl and add the onion/garlic from the pan.
Mix well with wet hands and form into small balls (I do a little bigger than a golf ball) and place on a parchment lined cookie sheet.
Bake roughly 18 mins or until internal temp has reached 165 degrees.
Serve over zucchini noodles, mashed sweet potatoes, or riced cauliflower.
Makes 16 meatballs.
